Sustainable Catering at ETH Zurich - final report published

Together with the World Food System Center (WFSC), ETH Seed Sustainability has supported several thesis projects to find ways to make university canteens more sustainable. Recommendations from the pivotal project are now available in the final report.

ETH Zurich published the final report «Sustainable Catering at ETH Zurich» (in German) describing a project lead by ETH Seed Sustainability and the World Food System Center. The report comprises, among others, student sub-projects on the impact of food choices on the climate, communication, reduction of food waste and on perceptions of the meals among the consumers.

In addition, the report depicts a climate program for reducing greenhouse gas emissions caused by catering at higher education institutions. Subsequent to the three-year climate program, a sustainability program will follow. Beside climate effects, the latter will cover further aspects like animal welfare, health and fair labor conditions.
